For art I created two stamps one was designed for smaller details and the larger one was meant to make an imprint on top of the shepherds pie i also made a pair of tweezers for fine dining plating designs both the stamps and the tweezers had a design on them that i drew and then converted into a 3D file English Beef rouladen --------------------- Top round sliced thin pound lightly One spoon of Dusseldorf mustard per rouladen One onion sautéed One red onion 8oz of Guinness 30oz of beef stock Table spoon of tomato paste Three to four celery stalks roughly one cup chopped Four to five carrots roughly one cup chopped Half cup of bacon crispy ( you can add more to your liking ) Dill pickle spears ( cut to fit ) One pickle per rouladen First chop all of your vegetables roughly and put them off to the side next sauté the white onion and cook the chopped up bacon until it is crispy after that pound the sliced beef lightly to thin it out next spread a spoon of mustard top with bacon first onions next, then goes the pickle spear cut to fit then roll it after it is rolled up tie tightly with butchers twine and sit to the side heat up a pan with a light layer of oil and sear all of the rouladens then take them out add vegetables and the Guinness to the pan bring to a light boil and then add the tomato paste and beef stock add the beef rouladens back to the sauce and bake for an hour at 350 after that remove the beef rouladens and use a cornstarch water mix to thicken sauce into a gravy Shepherd-ish pie ------------------------- Top round cut up into small to medium sized pieces 3/4 cup carrots chopped 3/4 cup celery chopped 1/4 cup red onion 6 oz of Guinness 15 oz of beef stock Teaspoon of Dusseldorf mustard Tablespoon of tomato paste First chop beef and brown them in a pan next combine vegetables and Guinness in a pan then add beef stock, mustard and tomato paste bring to a light simmer add cornstarch water mixture to thicken the sauce add beef and mix pour into casserole pan and spread mashed potatoes to top potato top ---------------- Two pounds of potatoes 1/4 butter Pinch of fresh ground pepper ( or to taste ) Salt to taste 1 cup of milk 1 bunch of green onion chopped thinly Cover top in grated parmesan First put a large pot of water on the stove and turn it on high heat while you are waiting for it to heat up cut the potatoes into quarters and boil them til they are tender put milk and chopped green onions and let them simmer to infuse the flavors combine milk and mashed potatoes with butter add salt and pepper to taste add bacon and spread across shepherds pie add parmesan to brown top Fusion explanation ----------------------------- Irish and German fusion one of the major flavors for the Irish side was Guinness so I used that instead of red wine in the sauce I believe this gave the sauce a deeper more full flavor over the red wine also I used a potato inside of some of the rouladens because the potato is a major ingredient in Irish food for the German side I used the ingredients for a beef rouladen and made a shepherds pie I also added bacon to the mashed potatoes. History For history I created two different dishes to combine my cultural backgrounds one being Irish and the other being german to do this I researched traditional dishes and flavors behind the cultures my final decisions were to make a beef rouladen and a shepherds pie however there was a twist for both of those dishes in the beef rouladen used Guinness to glaze my vegetables at the beginning of making the sauce also I changed the pickle inside to make it connect more to Irish with the shepherds pie I used the same Guinness sauce and added some things from the beef rouladen like celery and onions also I infused the mashed potatoes with bacon which is another ingredient. |
